Cheesy Ham Chowder

A lazy Easter Sunday full of Netflix and beer. My boyfriend and I stuffed our faces full of ham and mashed potatoes. Then we realized we had 8 pounds of ham in the fridge. What to do with 8 pounds ham? Soups, chowders, and chilis! This is a rich chowder but the flavors are not overwhelming and it is great left over.

Honey Roasted Rainbow Carrots

There is something about rainbow carrots. They do not taste any different but it makes your plate so much prettier. I actually want to eat more because they are so pretty. So when I was in the mood for a simple to fix veggie, honey roasted rainbow carrots was a no brainer.

I have been trying to eat better lately so I have been looking for simply, healthy, throw together meals. I really like this one because it was simple but still had a lot of flavor. This recipe I sort of followed, but really I did a "eh...thats good enough" kind of thing.

Lebanese Lemon Bean Salad

I just love me some kidney beans and chickpeas. I always put them on my salads so when I saw this I had to try it. This salad has a great crunch, and for not being a huge onion fan, I like the little hint of red onion with the lemon juice. I also like how this salad fills you up but doesn't sit on your stomach. A great side for any meal.
