Ginger-Orange Zest Roasted Pumpkin Seeds

This is the last post of the Yummy Pumpkin Seed Marathon. So far we have seen Cheesy, Curried, and Cinnamon Sugar and we can't forget last years Garlic Rosemary. I think these ginger orange seeds are my favorite from the marathon. A hint of sweet and the ginger is light. Plus these smell up your kitchen something wonderful when they are being baked. Hope everyone enjoyed these recipes!!


3 c. pumpkin seeds
4 Tbsp. olive oil
4 Tbsp. sugar
2 tsp. ground ginger
1 tsp. grated orange zest

1. Preheat oven to 350F and cover a baking sheet with foil (lightly spray with oil if needed).

2. In a medium bowl, toss the seeds with the olive oil, coating thoroughly.

3. Add sugar, ginger, and orange zest and mix.

4. Spread seeds in one even layer across the baking sheet.

5. Bake for 30 minutes, or until the seeds are golden brown. Stir the seeds every so often (every 10 minutes or so).

6. Stuff face!
