Throw Together Stuffing

I have never been a huge fan of stuffing, but this year my mom came up with a hybrid of two of her favorite stuffing recipes. I think this has converted me. I really liked this stuffing. It was very moist and the apple added just a little bit of sweet.

Tailgating 2011: Deep Fried Turkey

This past Saturday was the last was the last home game of the season. The game did not start till 7 pm, so we decided to go out with a bang. Everyone contributed and brought either a side or dessert. We had everything, from mashed potatoes, to mac and cheese, not to mention apple pie and squash cheesecake bars. And the main course?...we deep fried two 12 lb. turkeys. How many engineers does it take to put together a turkey frier?

Sweet Potato Puree

For Thanksgiving I made sweet potato pie (soon to be posted) for the first time. I actually had never had sweet potato pie before but I love anything with sweet potatoes so I figured, why not? I decided to make my own puree for this pie.

Cinnamon Roll Pie Crust

I LOVE this pie crust. It is so pretty not to mention delicious. It is simple and fun to make. The original recipe called for 2 teaspoons of cinnamon. I just went nuts with it and made sure I had a nice thick layer on the dough. I say use as much cinnamon as you want.

Thanksgiving Day: Sage Turkey Breast

Happy Thanksgiving!! I hope everyone had a great holiday. This year it was just my mom and I, so we tried to keep things on the small side. We made some awesome stuffing, green beans, sweet potato pie, and turkey. This year we didn't do a full turkey, but just half a turkey breast. I know it seems slightly odd to not have a full turkey, but it turned out very nice. The meat was very moist, and with just a little bit of brown gravy on top...I was full and ready for a nap.

Portal Cookie Cutters

Oh my goodness!!! WANT! WANT! WANT! I'm sorry. The geek in me is coming out with these. I am a huge Portal/Portal 2 fan. It is one of the best and funniest games out there. Slow Cooker: Chili Con Carne and Beans

Nothing is better on a cold Saturday than a nice bowl of chili and some college football (Go Gators!) with a beer in hand. This chili over a bed of rice is delicious with just a little kick thanks to my home grown jalapenos. I also had some home grown red peppers I threw in to add a little sweet crunch. In the end I enjoyed this recipe and am excited for tomorrows leftovers. Oh and I recommend topping this with a little shredded cheese.

Chicken and Pasta with Creamy Pesto Sauce

It's official! I am never buying pre-made pesto again. This is the first time I have ever made pesto, and it tastes sooo much better. Using fresh basil really comes through in this pasta and the pine nuts add a great crunch. I recommend topping this with a little parmesan cheese.

I really like this recipe. It is simply to make with not a lot of prep. It's tastes amazing and makes fantastic leftovers. I used ground beef for this post but I bet this will be great with a beef/pork mix.

Enchilada Stuffed Shells

This recipe was very intriguing to me. I have never seen enchilada shells before. They looked too yummy not to try. In addition, we added a little homemade salsa to the top made out of chopped tomatoes, red onions, cilantro, and garlic. That extra little crunch made the dish.

Kitty Litter Cake

I have been wanting to make this cake for over a year and I finally got the chance to do it! Behold, the kitty litter cake. What was hilarious was people actually refused to eat the cake! Too bad for them. Despite how it looks, it actually tastes really good. If you are looking for a way to gross out your friends, this is definitely the cake to do. On a side note, I was in a hurry making this so I didn't take any pictures during the making process but I think the final photos will make up for it.
