Collard Greens

This is the first time I have ever made collard greens. I was terrified they would come out bitter, but to my surprise they came out really nice. They had a nice little crunch to them, and the apple-cider vinegar and the sugar gave them a nice subtle sweet taste. Pair these with some good ole home made fried chicken and prepare for food comma. :D

Vinegar Chicken

For some reason my boyfriend has been craving chicken for the past few days. He came home with some chicken breast and asked me to find a recipe. I came across this one and I was surprised by how good it turned out considering we winged the original with what we had in the kitchen. The chicken had a nice crunch and the vinegar flavor was very subtle. I highly recommend this with a nice side of garlic mashed potatoes.

Sweet Potato Bread

I have been a little busy lately and haven't had much time to cook, but I have been looking for any excuse to use my new mixer. I had some left over sweet potato puree in the freezer from Thanksgiving and thought it would be great for this recipe. Plus it will give me a chance to try out my new bread hook. I like this recipe. The bread has a nice flavor. I used a 5x9 inch pan, I would recommend making multiple loafs in a slightly smaller pan. The center of this loaf was a touch under done for my taste. Other than that, I really like this recipe. A slice of this with some butter for breakfast is awesome!

How To: Work with Fondant

A few weeks ago, I promised my friend I would make a cake for her birthday. I decided to go all out this one and decorate the cake with orange, yellow, and purple polka dots and stripes made out of fondant. I know fondant can be a little intimidating, but it's like play-doh for adults. Below are a few hints and tips I have learned in experimenting with fondant. I should note I did not make my fondant from scratch. I used pre-made, pre-colored fondant (I'm lazy).

Mama's Simple Green Beans

My mom has been making me these green beans for as long as I can remember. These recipe is my Grandma's and I can remember her sitting on the couch when I was 5 years old for hours it seemed prepping green beans. Hope everyone enjoys these.
