Simple Blue Cheese Coleslaw

I have never been a huge fan of coleslaw, but I decided to give this recipe a try specifically for the blue cheese and the small amount of vinegar. And for someone who is on the edge of being anti-cabbage, I really liked this. The blue cheese is just enough so you get a hint of it over the mayo. I highly recommend to toss the coleslaw on top of any BBQ sandwich (in this case a smoked BBQ chicken sandwich).


1 (16 oz.) package of coleslaw mix
3/4 c. mayonnaise
1/4 c. Dijon mustard
1/3 c. crumbled blue cheese
2 Tbsp. white sugar
2 Tbsp. apple cider vinegar

1. Mix mayo, mustard, blue cheese, sugar and vinegar in a large bowl.



2. Add coleslaw and mix until slaw is thoroughly coated.


 3. Stuff face!
