Chocolate Peanut Butter Pie

It is my boyfriends birthday and he loves peanut butter. So chocolate peanut butter birthday pie it is! I made chocolate peanut butter pie not too long ago, but this is more complicated version. A chocolate cookie crust with a peanut butter cream cheese and chocolate ganache is very rich and perfect with a glass of milk.


Chocolate Cookie Crust:
1/2 stick butter, unsalted
2 c. chocolate cookies, finely ground (I used double stuffed Oreos)

Peanut Butter Filling:
8 oz. cream cheese, softened
1 c. peanut butter
1/2 c. sugar
2 tsp. pure vanilla extract
1 c. heavy cream

Chocolate Ganache:
4 oz. semisweet chocolate, chopped
1/2 c. heavy cream

Topping:
1/4 c. peanuts (unsalted roasted), chopped
1/4 c. semi sweet chocolate, chopped

Chocolate Cookie Crust:
1. Preheat the oven to 375 degrees.
2. Melt butter and stir into the cookie crumbs.


3. Press the cookie crumbs over the bottom of a 9-inch springform pan and slightly up the side.


4. Bake for 10 minutes. Set aside to cool complete.


Peanut Butter Filling:
5. Beat the cream cheese with the peanut butter, sugar and vanilla extract until blended.


6. In another bowl, whip the chilled cream until firm.


7. Fold one-third of the whipped cream into the peanut butter mixture, then fold in the remaining whipped cream.


8. Spoon the filling into the crust. Refrigerate until set, about 3 hours.


Chocolate Ganache:
9. Heat cream over medium heat until simmering.  Add chocolate and stir until melted.


10. Spread the chocolate topping over the peanut butter filling and refrigerate until just firm, about 20 minutes.


Topping:
11. Sprinkle the chopped peanuts and chocolate on top of the pie.


12. Carefully run a thin knife around the pie crust to loosen it, then remove the springform ring.


13. Stuff face!
