Jack and Coke Cupcakes

With today being the Superbowl, it is time to combine some baked goods with booze.

Update: These cupcakes are amazing, but beware, they burn going down. Just like taking a sip of Jack. When you first take a bite, you get the yummy chocolate and coke flavor, then swallow...wait for it...wait for it...and there it is. Nice, warm alcohol burn. It is so strange to get this from a cupcake, but you can't help but like it.

Chocolate Cola Cupcakes:
1 c. cola
2 sticks unsalted butter
3/4 c. unsweetened cocoa powder
2 c. flour
2 c. sugar
1.5 tsp. baking soda
3/4 tsp. salt
2 large eggs
, room temp
2/3 c. sour cream, room temp

Chocolate Whiskey Ganache:
8 ½ oz. semi chocolate
2/3 c. heavy cream
2 Tbsp. butter, room temp
1 to 2 tsp. Jack Daniels

Jack Daniels Buttercream:
4 c. confections sugar
1.5 sticks unsalted butter, at room temp
6 Tbsp. Jack Daniels

Decorations:
white sparkle sugar
24 cola gummies

Chocolate Cola Cupcakes:
1. Preheat oven to 350F.
2. Bring cola and butter to simmer in medium saucepan over medium heat.
3. Add cocoa powder and whisk until mixture is smooth. Allow to cool for at least fifteen minutes.
 
 

4. Whisk flour, baking soda, and salt in large bowl to blend.


5. Whisk eggs and sour cream in another large bowl.


6. Add the sugar and mix.


7. Add cola-chocolate mixture and beat just to combine.


8. Add flour mixture and beat briefly on slow speed. Fold with spatula until combined.


9. Divide batter among cupcake liners.
10. Bake cake until tester inserted into center comes out clean, about 17 minutes.


11. Cool cupcakes on a rack completely.


Chocolate Whiskey Ganache:
12. Heat the cream until simmering and add chocolate in a small saucepan.
13. Add the butter and whiskey and stir until combined.


14. Let the ganache cool until thick but still soft enough to be piped.
15. Cut the centers out of the cooled cupcakes.


16. Fill holes with ganache. You can spoon it or pipe it.


17. Top the ganache with piece cut out of the cupcake.


Jack Daniels Buttercream:
18. Whisk the butter in the bowl.


19. Slowly add the powdered sugar and mix until combined. 
20. Drizzle in the whiskey and whip it until combined.
21. Ice cupcakes.


22. Top with white sparkling sugar and gummy colas.

23. Stuff face!
