Creamy Orange Shrimp with Orange Rosemary Potatoes and Cesar Asparagus Salad

This was all my boyfriend on this one. He was in the mood to cook and felt like something a little different. I must say the creamy orange shrimp is delicious and was favorite dish of the night!



Over the weekend, we had some nasty rain roll through and it decided to wreck havoc on my rosemary bush. Granted it is large and could probably use a trim, but I opened the front door to find this.

 

What am I going to do with all of this rosemary?!?! It's like a small Christmas tree! There be an unusual amount of rosemary based recipes coming soon.

Creamy Orange Shrimp:
1 lb large peeled/deveined shrimp 
juice of 1 medium orange
1/4 c. light mayonnaise
2 Tbsp. horseradish
1 Tbsp. honey
1 tsp. seasoned salt (we used Season All)
1 Tbsp. canola oil
1 Tbsp. flour

Orange Rosemary Potatoes:
1 (20-oz) package refrigerated red potato wedges 
1–2 sprigs fresh rosemary
zest of 1 medium orange
2 Tbsp. canola oil
1 Tbsp. honey
1/2 tsp. salt
1/8 tsp. pepper

Cesar Asparagus Salad:
1 lb. fresh asparagus spears, cut to bite-sized pieces
2 romaine hearts, coarsely chopped
1 container of cherry tomatoes
1/4 c. Parmesan cheese, sheddred
1/4 c. sliced almonds
1/3 c. lite Caesar salad dressing 

Creamy Orange Shrimp:
1. Whisk mayonnaise, horseradish, honey, and seasoned salt until blended; set aside.


2. Preheat large sauté pan on medium-high heat for 2–3 minutes.
3. Place oil in pan, then add shrimp.


4. Sprinkle with flour. Cook and stir until shrimp just begin to turn pink.


5. Stir in orange juice to mayo mixture.


6. Reduce heat to medium and add mayo mixture to shrimp. Simmer and stir 3 to 4 minutes.


Orange Rosemary Potatoes:
7. Preheat oven to 400F.
8. Remove rosemary leaves from springs.
9. Combine all ingredients in a large bowl. Toss until evenly coated.


10. Place in baking dish and bake for 30 to 35 minutes. 


Cesar Asparagus Salad:
11. Place all ingredients in salad bowl.
12. Toss until evenly coated.


13. Stuff face!
