(Updated) Irish Carbomb Cupcakes

This was one of the first blog posts I ever did. It was before I started taking pictures of every step. I made some of these cupcakes for St. Patty's day and decided to update this old post.


I used these adorable St. Patty's liners.


Original post from 7/25/10: These are definitely in my top 5 list of favorite cupcakes of all time. They are very easy to make, taste amazing, and have booze in them. What more could you ask for?! These are perfect for tailgating.

Guiness Cupcakes (24):
1 c. Guinness
1 c. butter, melted
3/4 c. cocoa powder
2 c. flour
2 c. sugar
1.5 tsp. baking soda
1 tsp. salt
2 eggs
3/4 c. sour cream

Jameson Whiskey Ganache:
7 oz bittersweet chocolate
2/3 c. heavy cream
2 Tbsp. butter
2 tsp. Jameson whiskey
1 tsp. vanilla extract

Baileys Buttercream
3 c. powdered sugar
1 c. butter, room temp
4 Tbsp. Baileys

Guiness Cupcakes:
1. Preheat oven to 350 degrees (F).
2. In a large bowl, combine the flour, sugar, salt, and baking soda.


3. Mix in eggs and sour cream.


4. In a small pot over medium-low heat, melt the butter, then add Guinness and cocoa powder.


5. Add chocolate mixture to flour mixture and mix until combined.


6. Spoon better into cupcake liners.


7. Bake for 17 minute.



8. Allow to cool completely.


Jameson Whiskey Ganache:
9. Heat cream in a small pot over medium heat.
10. Add chocolate and stir gently until chocolate is melted and combined with the cream.


11. Mix in butter, vanilla, and Jameson.


12. Sit aside and allow to cool for 2 to 3 minutes.

Baileys Buttercream:
13. Combine all ingredients in a large bowl and mix until fluffy.


Assembly:
14. Once the cupcakes have cooled, use a sharp knife to cut out the center of the cupcakes. Don't throw away the centers.


15. Spoon ganache into the cupcakes.


16. Place cupcake centers back into ganache (I like adding enough ganache so when the centers are placed back, ganache oozes out of the sides so it can be seen under the frosting).


17. Pipe icing onto the cupcakes (This is the not the type of cupcake to spread the frosting. Can use a sandwich bag with one of the corners cut off to pipe the icing).
18. Stuff face!
