Kahlua Mudslide Cupcakes

Two of my friends just graduated with their Ph.D's. It is time to party it up!! Boozed filled cupcakes is the only way to go.

Just for fun, here is the recipe for a Kahlua Mudslide...the drink. Maybe you can make one to enjoy while making the cupcakes.

Kahlua Mudslide:
1/2 oz. vodka
1/2 oz. Bailey's Irish cream
1/2 oz. Kahlua coffee liqueur
1 oz. cream
Shake everything with ice. Strain into a Collins glass filled with ice.

On to the cupcakes!!

Cupcakes (~24):
1 box dark chocolate cake mix
3 eggs
1/2 c. vegetable oil
1/2 c. vodka
1/2 c. Kahlua
1/4 c. Baileys Irish Cream
1 tsp instant coffee (I used vanilla coffee)

1 1/2 sticks (12 Tbsp.) butter, room temp
4-5 c. confectioners sugar
1 Tbsp. Kahlua
1 Tbsp. Baileys Irish Cream
1 tsp. vanilla extract

chocolate sprinkles
chocolate covered espresso beans

1. Preheat oven to 350 degrees. Put cupcake liners in tins.

2. Combine all ingredients and mix until well combined.

3. Pour into cupcake tins, filling about 2/3 of the way.

4. Bake for 19-22 minutes until toothpick inserted comes out clean.

5. Let cool for about 5 minutes in the pan, then remove and let cool completely.

6. Cream butter and 1 cup confectioners sugar until fluffy.

7. Add Kahlua, Baileys and vanilla extract.

8. Mix in remaining sugar until desired consistency is reached.

9. Frost cupcakes.

10. Decorate with chocolate sprinkles and top with chocolate covered espresso beans.

11. Stuff face!!
