Compound Butters (Lemon Peppercorn, Herb Blend, Red Wine, and Avocado Lime)

I have been wanting to make these for a long time. They are so easy (and pretty)! Plus, they are great Christmas presents.


For storing the butter, this is a great how-to plus some other great compound butter recipes.

The butter can be frozen for long term storage. Remove from the freeze 15 minutes before use.

Lemon Peppercorn:
1 stick of butter, room temp.
zest of 1 lemon
1 Tbsp. thyme, chopped
1/2 tsp. peppercorns, crushed

Avocado Lime:
1 stick of butter, room temp.
1 avocado
zest of 1 lime
juice of 1 lime

Herb Blend:
1 stick of butter, room temp.
1 tsp. basil olive oil
1/2 Tbsp. sage, chopped
1 Tbsp. rosemary, chopped
1/2 Tbsp. thyme, chopped
squeeze of lemon juice
sprinkle of salt

Red Wine:
1 stick of butter, room temp.
1/4 c. red wine
1 shallot, finely chopped
1 c. parsley, chopped
sprinkle of salt and pepper

Lemon Peppercorn:
1. Combine all ingredients in a medium bowl.


2. Scrape butter out of bowl onto parchment paper (or wax paper). Gently roll into a 1 inch log, twist the ends and freeze.

Avocado Lime:
1. Cut avocado in half, remove seed, and scoop out the avocado into a bowl.
2. Smash avocado with a fork until mostly smooth.


3. Add butter, lime zest and juice...combine.


4. Scrape butter out of bowl onto parchment paper (or wax paper). Gently roll into a 1 1/2 inch log, twist the ends and freeze.

Herb Blend:
1. Combine all ingredients in a medium bowl.


2. Scrape butter out of bowl onto parchment paper (or wax paper). Gently roll into a 1 inch log, twist the ends and freeze.

Red Wine:
1. In a small pan over high heat, combine shallots and red wine. Bring to a boil.


2. Cook until wine is almost gone but don't burn the shallots.


3. Combine wine infused shallots with butter, parsley, salt and pepper. (The extra wine can separate from the butter if there is too much. Let the butter sit for a few minutes and pour out the excess wine before storing).


4. Scrape butter out of bowl onto parchment paper (or wax paper). Gently roll into a 1 inch log, twist the ends and freeze.
5. Put on something delicious and stuff face!
