Seattle Food: Part 1/3

Hello Giggling Chefs!

I finally made it to Washington. I am currently living in temporary housing in Seattle. My apartment is on 2nd Avenue just two blocks from Pike's Place. Since I am only in this apartment for a month I have decided to not stock my fridge but instead try to eat somewhere new everyday. I know I have not posted anything in quite some time so I thought why not post about the restaurants and bars I have come across during my stay in the city. So here begins part 1 of Seattle Food.

Vegetable Soup

I have been looking for a good vegetable soup for awhile now. I really like this one simply because it has 13 different vegetables in it. It cooks for several hours ending with a nice, hearty, chunky soup.

Vegetable Salad Topper

I have always been one of those people that likes more toppings on my salad than actual salad. Lately I have been trying to come up with recipes that take only a few minutes to prep but will last a few days. This salad topper is one of my favorites.

Slow Cooker: Orange Lentil Soup

What to do with a left over ham bone...soup is always a good choice. But I decided to go for lentils for this one. Simple and quite delicious with some pita bread.

How To: Juice a Watermelon

Hello giggling chefs. Life has been a bit crazy these past few months and it is only going to continue, but I miss cooking and I feel bad leaving the blog with no activity. So I am going to make an effort to post more. Forgive me for being a bit rusty. Lets starts things back up with a simple, light treat.

Chocolate Cake topped with White Chocolate Mousse

It's been awhile since I have made a cake. So instead of doing my Sunday cleaning, I decided to do some baking. This will be a yummy addition to my lunches this week.

Seared Yellowfin Tuna with Mango Curry Sauce

I successfully cooked a delicious meal of tuna with mushroom sauce and mushroom rice with my first pound of tuna. On to cooking the second pound. I tried to go for something as simple as possible, because well...not going to lie, I was feeling super lazy. But I also wanted something different from the mushroom sauce. A cold mango curry sauce did the trick with some left over mushroom rice.

Seared Yellowfin Tuna with Mushroom Sauce and Mushroom Rice

Our favorite fish market had a killer deal of buy one pound of sushi-grade yellowfin tuna, get one pound free. Couldn't resist. Here is what I did with the first pound.

Pan Fried Duck Breast

Damn it Gordon Ramsay!! Stop posting stupidly easy recipes I can't resist trying. I like duck but have always been too intimated to try cooking it myself. Well, not anymore!

Slow Cooker: Pulled Chicken

This is another quick and easy chicken recipe. I like this one because there is no sauce so I can add whatever I want to it later.

Strawberry Short-Cupcakes

I think the strawberry was just a bit too big for this cupcake...but I am okay with it. These are delicious!

Slow Cooker: Pulled Pork

This is some delicious stuff right here. I have made it twice in two weeks. Put it on a bun with some blue cheese coleslaw, and BBQ sauce then chow down!

Chocolate Chip Cookie Dough Dip

I love the idea of these dessert dips. It is a great add for any get together. I know what you are thinking but don't worry...no salmonella here. There are no eggs in the recipe so it more of a fake cookie dough. Either way it is delicious!

Slow Cooker: Red Chicken Curry

Well the final picture isn't the best but this is a great curry recipe. When I first made this I didn't make any rice so I thought I would wait, make rice, and take a prettier picture. Oops. Forgot. Oh well…if I make it again, I will update the picture. :D

Caprese Chicken

I am on a chicken kick. I have been a bit busy lately so I have been looking for fast and simple. With chicken you can throw it in a skillet with a few ingredients and end up with a nice dinner in no time. This recipe goes on my list of favorite chicken recipes.

Lemon and Garlic Roasted Chicken

I really like this recipe. It is a simple throw together and you can taste every single ingredient (there are only six).

Cream of Broccoli and Potato Soup

I love a thick soup. This soup is great because there is actually no cream, but the starch from the potatoes thickens it up.

Homemade Chicken Stock

It has been a busy month and I am a bit behind on my posts. I promise to catch up this month. Here goes nothing! Starting back up with homemade chicken stock. This is one of those items I always have on hand. This is not the prettiest post but it is nice to know you can use ALL of the chicken, even the bones.

(Vertical) Roasted Chicken with Thyme and Vegetables

I am a sucker for a roasted chicken. It is always so moist and delicious. That is definitely the case for this recipe. There is juice just pouring out of this bird when you eat it. It is a simple, straight forward recipe that is amazing! I love it and will definitely be making it again.
