Honey Roasted Rainbow Carrots

There is something about rainbow carrots. They do not taste any different but it makes your plate so much prettier. I actually want to eat more because they are so pretty. So when I was in the mood for a simple to fix veggie, honey roasted rainbow carrots was a no brainer.


I was hunting around for a recipe for these and after reading a few I just decided to do it by taste since there is only five ingredients. The measurements below are just estimates, but basically you just want to coat the carrots in olive oil and honey. Thats really all there is to it.

Honey Roasted Carrots:
2 bunches of carrots
drizzle of olive oil
1/4 c. orange blossom honey
sprinkle of salt/pepper

1. Preheat oven to 450F.
2. Cut off stem. Slice carrots down the center, then cut into thirds. If carrots are a little stringy, give a light peel first.

3. In a medium sized bowl, combine carrots with olive oil then honey. Stir until carrot are fully coated.


4. Place into a foil covered bake dish (will help with the clean up later). Sprinkle with salt and pepper.


5. Bake for about 20 minutes or until the carrots are tender.


6. Stuff face!
