Almond Cream Dip with Strawberries and Mini Nilla Wafers

Recently, I volunteered to make some desserts for a party. We were celebrating our coaches decision to leave the gym and go back to engineering. A send-off party if you will. What do you make for a bunch of crossfitters? I seriously considered making something paleo, then thought...f*** it! I'm going paleo-free! And it was a hit!

It was a fun night full of food and booze. It was nice to see so many people to see our coach off. This people shows about half of the number of people that were there.

Okay on to the food. I made a double batch of this stuff so a warning...if you do make a double batch using your mixer, you have a lot of liquids and it is going to splash everywhere. So you might want to put a towel over your mixer so you don't dirty up your kitchen. 


Almond Cream:
1 (3.4 oz) box of french vanilla instant pudding
2 c. whipping cream
1 c. milk
1/2 tsp. almond extract
2 pints of strawberries (optional)
1 box mini Nilla Wafers (optional)

1. Combine all of the ingredients into a large bowl. 


2. Mix on high for about 8 minutes, or until soft peaks form. 


3. Stuff face!
